I love a yummy and EASY recipe.
Making homemade meals for your family does NOT mean you have to be in the kitchen for hours. Which makes me happy!
One of my families favorite recipes are these BBQ Chicken Tacos. I happened upon this one day… I had some of my BBQ Crockpot Chicken leftover…and my family wanted tacos… so I looked around at what I had in the fridge and pantry… came up with this combo and it was a KEEPER!
Here’s what you’ll need:
Ingredients:
- BBQ Crockpot Chicken (1/2 of the recipe)
- Flour Tortillas, 6″ size
- Shredded Cheddar Cheese
- Mexi-Street Corn:
- 1 bag frozen corn (cooked per package directions)
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 teaspoon chili powder
- 1 Tablespoon lime juice
- 1/4 cup grated Parmesan or Cotija cheese
Preheat the over to 350 degrees.
Line an 8×8 glass dish with foil or parchment paper (for easy cleanup).
Warm up the BBQ Crockpot Chicken you saved (or use half the just cooked recipe.)
Cook the corn according to the package directions. Then mix in the mayonnaise, sour cream, chili powder, lime juice and Parmesan cheese. Then heat the corn mixture for 1 minute in the microwave and re-stir.
Now lets assemble the tacos.
I take the tortilla and first layer the chicken, then the corn mixture, then the cheddar cheese.
Place them into baking dish.
Cook at 350 for 3-5 minutes just to melt the cheese and warm them throughout.
Now your ready to eat.
You can add cilantro or additional sour cream to the top if you want. Serve with a side of refried beans… and dinner is done.
