My kiddos have always loved broccoli! That of course makes me happy… anytime you can get kiddos to eat veggies is a win! This broccoli casserole is a great side dish anytime of the year, including the holidays.
Ingredients:
- 2 (10 oz) packages frozen chopped broccoli florets, cooked and drained
- 1/2 can cream of mushroom soup
- 1 egg, beaten
- 1/2 cup mayonnaise
- 2 TBSP minced onion
- 1 cup shredded cheddar cheese
- salt and pepper to taste
- 1 sleeve Ritz crackers, crushed
- 2 TBSP butter, melted
Directions:
- Preheat oven to 350 degrees.
- Spray a 9″x13″ baking dish with cooking spray.
- In a large bowl, mix together the cooked broccoli, soup, egg, mayo, onion, cheese and salt and pepper.
- Pour into the baking dish.
- Mix crushed crackers and butter together and sprinkle on top of the broccoli mixture.
- Bake for 30 minutes.
- Enjoy!
