Looking for an EASY recipe with just a few ingredients that even your kiddos will love? This is one to add to your weekly dinner rotation!
Ingredients:
- 16 oz spaghetti or pasta of your choice
- 2 (2.52-oz) pkg fully cooked bacon, crumbled
- 1 (8-oz) block cream cheese, softened
- 1 cup chicken broth
- 1 (5-oz) pkg baby spinach
- 2 large tomatoes, chopped
- 2 cups of rotisserie chicken , deboned and shredded (you can also use fresh chicken tenderloins and cook then chop into bite sized pieces)
Instructions:
- Shred rotisserie chicken.
- Cook pasta according to package directions. Drain.
- Then heat bacon according to package directions and crumble. (You can also use prepackaged bacon pieces).
- Combine cream cheese and broth in a saucepan and cook over medium heat 3-4 minutes or until cheese is melted, stirring often. I use a whisk to help blend it.
- Add pasta and stir to coat.
- Stir in spinach and cook until wilted, then add the chopped tomatoes, chicken and 1/2 the bacon.
- Season with salt and pepper, if desired.
- Sprinkle with remaining bacon.
Serve warm or at room temperature. We like ours with a side of cheesy garlic bread.
