Every year we make this cake for Jesus’s Birthday! Of course it will be perfect for any special occasion that needs a cake! It is super moist and has the best fudgey icing!!!
You will need:
For the CAKE:
- 2 cups sugar
- 2 cups all purpose flour (sifted)
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 cup buttermilk
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup corn oil
- 3 TBSP Cocoa powder
- 1 cup water
For the ICING:
- 1 stick butter
- 3 TBSP Cocoa powder
- 1/3 cup buttermilk
- 1 box powdered sugar (sifted)
- 1 1/2 cups pecans (optional)
How to make it:
- Preheat oven to 300 degrees.
- Grease a 13×9 baking dish.
- For the cake: In a large bowl, Mix the first three dry ingredients together.
- Then in a medium bowl mix together the baking soda, buttermilk, vanilla and eggs.
- Then in a small saucepan bring the oil, Cocoa powder (3 TBSP) and water to a boil.
- Pour hot boiled mixture over the dry flour mixture and stir well until dissolved.
- Then fold in the buttermilk mixture.
- Pour into the greased baking dish.
- Bake at 300 degrees for 55 minutes.
- When the cake is almost done make the icing.
- For the icing: to the saucepan add the butter, Cocoa and buttermilk and bring to a boil. Then pour the hot mixture over the sifted powder sugar stirring well until smooth. Add pecans if desired.
- As soon as the cake comes out of the oven, pour the icing over the cake and wrap tightly with foil. Let sit covered at room temperature 24 hours or overnight in fridge.
