When the weather get cooler, my family loves to have soups and grilled cheese. We love the broccoli cheddar soup from Panera Bread, so I recreated this version of it. My oldest tells me he likes mine better.
I put mine in the crockpot, but you can definitely make it in a dutch oven!
Let’s get cooking:
This recipe will serve at least 8.
Ingredients:
- 4 cups chicken broth
- 2 cups julienned carrots
- 3 Bags frozen broccoli florets, cooked in microwave for 1/2 time , can use fresh- 1 large head chopped into florets
- 8 TBSP AP flour (1/2 cup)
- 3-4 cloves garlic minced
- 1 medium onion chopped
- 4 cups shredded sharp cheddar
- 1 stick butter
- 4 cups half & half or heavy cream
- 1-2 tsp salt
- 1/2-1 tsp pepper
- 1/2 tsp Paprika
Directions:
- In crockpot add broth.
- In saucepan melt butter.
- Add onion to the melted butter and sauté for 3-4 minutes, until onion translucent. Then add garlic and cook one more minute.
- Whisk in flour for 1-2 minutes then add to broth in crockpot, stir to combine.
- Then add half & half, broccoli and carrots.
- Add salt, pepper and paprika. Stir again.
- Put the lid on the crockpot and cook on high 3-4 hours.
- During last 30 minutes of cooking, add shredded cheese.
- Serve with grilled cheese, toasty bread or in bread bowl.
- Enjoy!!!
