Anyone else love a recipe that is quick, easy and still tastes yummy? Me too.
I have an easy to make BBQ chicken recipe that you can start in the morning and it will be ready just in time for dinner! How? I make it in one of my MOST used kitchen small appliances- my crockpot.
Do you have a crockpot? If so, do you use it a lot? I have found that I use mine AT LEAST 3 times a week. It’s quick and does all the cooking throughout the day and your meal is done in time for dinner. It also keeps your meats so moist and tender. Say goodbye to dry, chewy meat!
So let’s make some BBQ chicken!
First you need to gather your ingredients…there aren’t very many at all.
Ingredients:
•3# bag frozen chicken thighs (you can use breasts if you prefer)
• salt and pepper
•chicken seasoning, this is our FAV
•bbq sauce, this is our FAV
DIRECTIONS:
Get out your crockpot. I like to line mine with these amazing liners– makes clean up a breeze when your done.
Add the chicken to crockpot. I add mine from frozen- it has ALWAYS cooked all the way through, and I use my meat thermometer to double check. If you don’t feel comfortable cooking from frozen, feel free to thaw your chicken first.
Sprinkle with S&P and chicken seasoning.
Pour about 1/2 cup BBQ sauce over the top of the chicken.
Put the lid on and cook on LOW for 8 hrs or HIGH for 5-6.
Once the chicken is cooked thoroughly. Take the chicken out of the crockpot. Discard the juices. Shred the chicken. Add more BBQ sauce and stir.
*** There is no need to add any extra liquid when cooking. The thighs are very juicy and produce tons of extra juice on their own. 😉 If you are using chicken breasts, you can add 1/2 cup of water before cooking.
SERVE the meat alone, in BBQ CHICKEN SLIDERS, in BBQ CHICKEN TACOS, on a baked sweet potato or sweet potato fries, or on tortilla chips with cheese for some BBQ nachos. The possibilities are endless.
