If you are like me, you are always looking for delicious and EASY recipes to make for your family. Life can be so busy and I don’t have time to spend hours each night making dinner… so using little short cuts (like rotisserie chicken) can save tons of time! (*TIP: I buy a couple of rotisserie chicken, debone them and then freeze in freezer bags for use on nights when I need a quicker meal- you can defrost overnight (or the morning of) in the fridge and the chicken is ready to use!)
I recently created this recipe the other night when I was at a loss for what we were going to have for dinner. It was a hit with my entire family! I served our Chicken Tacos with a side of refried beans.
Ingredients:
•2 cups rotisserie chicken, shredded
•1/2 cup salsa
•1 TBSP taco seasoning
•fajita or street taco flour tortillas
•shredded cheddar cheese
•shredded lettuce
(Optional: sour cream, diced avocado, tomatoes)
Directions:
- Preheat oven to 350.
- Take 2 cups shredded Rotisserie chicken and mix in salsa and taco seasoning.
- Fill each tortilla with 2-3 TBSP chicken mixture. I place each one lined up in a glass baking dish.
- Top with shredded cheese.
- Place in oven for 10-12 minutes.
- Top with shredded lettuce and any extra optional toppings your family likes.
