Do you have a favorite side dish you cook for the holidays? My family loves dressing and nothing is better than a homemade dressing with fresh cornbread. This is my go to recipe that I have cooked for years:
Ingredients:
- 1 recipe of cooked cornbread (9″ square pan size)THIS is our favorite to use
- 5 slices of white bread, stale, cut into cubes (you can also use plain croutons)
- 10 TBSP butter (this will be divided in the recipe)
- 2 stalks of celery, chopped to equal 1 cup
- 1 large onion chopped
- 4 cups chicken (or turkey) broth
- 5 eggs
- 1 TBSP fresh sage, chopped
- 2 TBSP chopped fresh parsley (can substitute 2 teaspoons dried parsley)
- salt and pepper
- cooking spray
Directions:
- Cook the cornbread according to the package instructions and allow to cool.
- Preheat the oven to 350 degrees.
- Spray a 9″x13″ baking dish with cooking spray.
- In a large bowl, crumble the cooled cornbread and add the bread cubes, mixing to combine.
- In a large pain, melt 4 TBSP of butter on medium heat. Once melted, add the onion and celery and cook until softened, approximately 7-8 minutes.
- Add salt and pepper to the vegetables to taste.
- Add the cooked vegetables to the bowl with the cornbread mixture.
- Melt the remaining 6 TBSP butter and pour into a separate large bowl and add the broth, eggs, sage and salt and pepper to taste- mixing well to combine.
- Pour the butter mixture into the cornbread mixture, stir well to combine.
- Transfer the mixture into the baking dish.
- Bake for approximately 45 minutes, the dressing will be lightly browned and cooked through.
- Sprinkle with parsley and sage leaves if desired.
- Enjoy!
