Mac & cheese is one of those comfort foods my family loves to eat all year long, not just for the holidays. There is just something about its cheesy goodness.
Ingredients:
- 16 oz elbow macaroni
- 24 oz small curd cottage cheese
- 3 eggs, beaten
- 4 cups shredded cheddar cheese
- 1/4 tsp cayenne pepper
- 1 tsp paprika
Directions:
- Preheat oven to 350 degrees.
- Spray a 9″x13″ baking dish with cooking spray.
- Boil the macaroni noodles until tender, then drain and add to a large bowl.
- Add all remaining ingredients, reserving 1 cup of the cheddar cheese.
- Pour into the baking dish.
- Sprinkle with the remaining 1 cup cheddar cheese.
- Cover with foil and bake for 40 minutes.
- Enjoy!
