I have been making this for years and it’s still one of my families favorites. With cooler temperatures coming soon, now is the perfect time to get out your crockpot for all those yummy soups, stews and comfort foods!
Ingredients:
•4-6 chicken thighs/ breasts
•2 cans black beans (rinse and drained)
•1 bag frozen corn
•1- 32 oz container fresh salsa (you can also use jarred)
Directions:
- Put chicken in bottom of crockpot. Top with salsa, corn and black beans.
- Cook on high 3-4 hours (low 6-7) until chicken is cooked through.
- Take out chicken and shred. Then add back to crockpot and stir.
- We like to serve it with shredded cheese, avocado or sour cream and a side of cornbread or crushed tortilla chips on top.
