This is a tried a true recipe I have been making for years! It is so flavorful and can be prepped ahead of time! We like to serve ours with a side of Spanish rice.
INGREDIENTS:
- 2 TBSP Homemade fajita seasoning- see below for recipe or 1 packet of fajita seasoning (we like Siete if not using homemade)
- 1 large sweet yellow onion
- 3-4 bell peppers (I use 2 green, 1 red, 1 yellow/orange)
- 4-6 Chicken breasts or thighs
- 2 Tbsp avocado or olive oil
- 1 lime
- 8, 6-inch tortillas
Optional:
- sour cream
- Avocado
- Fresh cilantro
- Shredded cheddar cheese
HOMEMADE FAJITA SEASONING:
(I like to double or triple this and store it in a glass spice jar.)
- 1 TBSP chili powder
- 1 1/2 tsp paprika
- 1/8 tsp cayenne pepper
- 1/4 tsp cumin
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1 tsp sugar (you can omit or replace with Stevia if Keto/low carb)
- 1/2 tsp Himalayan pink sea salt
DIRECTIONS:
- Preheat oven to 400 degrees.
- Spray a 13” x 9” glass baking dish with cooking spray. (You could also use a rimmed baking sheet.)
- Thinly slice onion, bell peppers and chicken and add to the glass baking dish.
- Drizzle with avocado (or olive) oil.
- Sprinkle with 2 TABLESPOONS of the homemade fajita seasoning.
- Toss to coat all the chicken and vegetables.
- Bake at 400 degrees for 30-40 minutes, until chicken is cooked through. Toss/stir halfway through cooking time.
- As soon as they are out of the oven drizzle with fresh lime juice.
- You can serve this as a fajita bowl if you are doing low carb or place a small amount into a warmed tortilla. Top with shredded cheddar cheese, cilantro, sliced avocado and/or sour cream.
