This is an easy to make dinner idea, perfect for a busy weeknight. Just a few ingredients and one pan makes clean up a breeze! You can swap up the meat and veggies and even substitute sweet potatoes for variety.
INGREDIENTS:
- Chicken breasts or thighs, boneless and skinless (I used 8 thighs)
- Fine Green beans (fresh or frozen)- I used two bags frozen
- Baby red potatoes (washed), I used a 3 pound bag
- Avocado or olive oil
- Lemon pepper seasoning
- Salt and Pepper
- Shredded cheddar (optional)
DIRECTIONS:
- Preheat oven to 400°
- Line a large baking sheet with foil or parchment paper (for easy clean up)
- Poke holes in the potatoes with a fork and place on one end of the baking sheet
- If using frozen green beans- I get the “steamable” kind and precook them for 4 minutes per bag and add to center of baking sheet
- Add the chicken thighs to the other end
- Drizzle the potatoes and green beans with the olive oil, then season everything with lemon pepper seasoning and salt and pepper to taste.
- Bake uncovered for 35-40 minutes until the chicken is completely cooked and the potatoes are tender.
- After everything is cooked, I “smash” the potatoes with the back of a large spoon and sprinkle a little cheddar cheese on top
- Serve warm and enjoy!
