This is a great side dish that adds some veggies into your menu too! It has gooey cheese, tender yellow squash and a crunchy topping.
Ingredients:
- 4 cups sliced yellow squash
- 1/2 cup chopped onion
- 1 sleeve of Ritz crackers, crushed
- 1 cup shredded cheddar cheese
- 2 eggs, beaten
- 3/4 cup milk
- 1/4 cup butter, melted
- 1 tsp salt
- black pepper to taste
- 2 TBSP butter
- cooking spray
Directions:
- Preheat oven to 400 degrees.
- Spray a 9″x13″ baking dish with cooking spray.
- In a dutch oven, bring water to a boil (enough to cover the squash), add the squash and onion and boil for approximately 10 minutes or until squash is tender. Drain well and place in a large bowl.
- In a medium bowl, combine the cracker crumbs and cheese. Add half of this mixture to the large bowl with the squash and onions.
- In a small bowl, add eggs and milk, stir well then add to squash mixture.
- Add the 1/4 cup melted butter, salt and pepper to the squash mixture and stir well to combine.
- Spread the squash mixture into the baking dish.
- Sprinkle with the remaining cracker mixture and then add the 2 TBSP butter in little pats over the top.
- Bake for 25 minutes, until lightly browned.
