This is my families favorite side dish. They request it for both Thanksgiving and Christmas every year! It has a sweet, crunchy topping that makes it even better.
Ingredients:
Casserole:
- 3 cups cooked sweet potatoes, mashed
- 3/4 cup white sugar
- 1/4 cup butter, melted
- 2 eggs, beaten
- 1 tsp vanilla
- 1/3 cup evaporated milk
Topping:
- 1 box (16 oz) light brown sugar (equals 2 1/3 cups packed)
- 1/2 cup self rising flour
- 1/3 cup melted butter
- 1 cup chopped walnuts or pecans, optional
Directions:
- Preheat oven to 325 degrees.
- Spray a 9″x13″ baking dish with cooking spray.
- Mix the casserole ingredients together. I use my KitchenAid mixer- makes it go fast and mixes well.
- Pour the mixed casserole ingredients into the baking dish.
- In a medium bowl, mix all the topping ingredients together until crumbly. Then evenly place on top of the casserole mixture.
- Bake for 45 minutes.
