Summertime is one of my favorite times of year. Longer days. Warmer temps and lots of sunshine. We love to grill out and eat outside on our deck.
One of my families favorite side dishes is my fruit salad. It’s easy to make and can be made ahead of time to take to a get together or cookout!
Ingredients:
- 3- 15 oz cans mandarin oranges
- 3- 15 oz cans sliced peaches
- 1- 20 oz can crushed pineapple
- 1/4 cup sugar
- 1/3 cup plain yogurt
- 1- 8oz block cream cheese
- 1 bag mini marshmallows
Directions:
- Drain all cans of fruit in a colander. (If you aren’t making it ahead, I will chill the fruit in the cans in the refrigerator.)
- Soften the block for cream cheese. I put it in a microwave safe bowl on high for 20-30 seconds.
- In a large bowl that has a lid, add softened cream cheese and sugar. Mix together until well blended.
- Then stir in the yogurt.
- Then stir in the drained fruit.
- Then stir in the bag of fruit.
- We like to make it ahead and serve it chilled.
- Store in fridge.
This will make a large bowl and will be a great size for get togethers. You can half or even double as needed. My family loves it – so we find it only lasts a few days around here!
