It’s soup season! I love a meal that is easy to put together, homemade and can be made in one pot! This makes a large amount- we always have enough for two nights plus some extra. You can always freeze it too! These 1 cup silicone molds are perfect for freezing individual portions.
Ingredients:
- 1 pound ground beef (you can double the beef if you like more meat)
- 1 large onion diced
- 2 tsp garlic minced
- Salt & pepper to taste
- 4 cups beef broth
- 1 can mild rotel
- 1- 15 oz can petite diced tomatoes
- 2 cans condensed tomato soup
- 1 TBSP worcestershire sauce
- 2 tsp Italian seasoning
- 1 12 oz bag frozen mixed vegetables
- 1- bag frozen Lima beans
- 1- bag frozen okra
- 4 medium potatoes (I use russet) washed, peeled and chopped into chunks
Directions:
- In a dutch oven (or a large pot) add ground beef, onion and garliic and cook until meat is no longer pink and onions are translucent.
- Season with salt and pepper and stir.
- Add in the beef broth, rotel, tomatoes, tomato soup, Worcestershire sauce, Italian seasoning, vegetables and potatoes.
- Bring to a boil, then reduce heat, cover and simmer for about 30 minutes, until potatoes are fork tender.
- We serve ours with cornbread.
