There’s nothing better than a warm bowl of creamy tomato soup with a grilled cheese sandwich—especially when the slow cooker does most of the work! This easy Crockpot Tomato Basil Soup is creamy, comforting, and has that Panera-inspired flavor my family loves.
Easy Crockpot Tomato Basil Soup
Serves: 6–8

Cook time: 5–7 hours
Ingredients
- 2 cans (28 ounces each) crushed tomatoes
- 2 cups chicken broth
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried basil
- 1 teaspoon Italian seasoning
- 1 teaspoon sugar, optional
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup heavy cream
- ½ cup freshly grated Parmesan cheese
- ½ cup fresh basil, chopped
Instructions
- Add the crushed tomatoes, chicken broth, onion, garlic, tomato paste, dried basil, Italian seasoning, sugar, salt, and pepper to the slow cooker. Stir everything together.
- Cover and cook on LOW for 5–7 hours or HIGH for 3–4 hours, until the onion is soft.
- Carefully blend the soup until smooth using an immersion blender. You can also transfer it to a regular blender in small batches.
- Stir in the heavy cream, Parmesan, and fresh basil.
- Cover and cook for another 15–20 minutes on LOW, just until everything is warm and creamy. Taste and adjust the seasonings if needed.
Serve it with grilled cheese, crusty bread, or a simple salad for an easy and cozy dinner.
